Basil Bruschetta

Bruschetta is a delicious antipasto, or appetizer, from Italy that has become popular all over the world. This wonderful starter dish consists of thin slices of bread toasted with olive oil and topped with vegetables and herbs. There are countless ways to vary the basic bruschetta recipe, but they almost always involve fresh basil, which brings a distinct Italian flavor to this beloved Italian snack.

Basil Olive Bruschetta

This bruschetta recipe features another Mediterranean favorite—olives. Green olives are the perfect choice for this recipe, although kalamata olives will also work well. The ingredients you will need are:

  • 1 cup green olives, pitted and chopped
  • 6 basil leaves, finely chopped
  • 2 scallions, finely chopped
  • 1 garlic clove, finely chopped
  • ¼ cup olive oil
  • ¼ cup parmesan cheese, grated
  • 20 slices baguette, grilled or toasted

To prepare the bread, slice your baguette into fairly thin slices and brush both sides with olive oil. Toast the slices lightly on both sides on a grill, or in a toaster if you prefer. Combine the remaining ingredients in a bowl and toss them lightly. Finally, divide the mixture among your baguette slices and top each piece with another sprinkle of parmesan cheese.

Basil Avocado Bruschetta

When avocados are in season, it is tempting to put them in everything you make. Fortunately, the irresistible creamy fruit of the avocado makes a great bruschetta topping. For this recipe, you’ll need:

  • 2 avocados
  • 6 basil leaves, finely chopped
  • ½ cup tomatoes, diced
  • ½ cup red onion, diced
  • 1 garlic clove, finely chopped
  • 2 Tbsp olive oil
  • 20 slices sourdough baguette, toasted

Thin-slice your sourdough baguette, brush both sides with olive oil and lightly grill or toast the slices until they become slightly crispy. Cut one avocado into long, thin slices that will cover the top of your toasted bread. Dice the other avocado, and add to a bowl with your diced tomatoes, onion, garlic, basil and olive oil. Toss these ingredients together, and add salt and pepper to taste. Top your bread slices with heaping tablespoons of your bruschetta mixture and garnish with a basil leaf.
